{"id":26,"date":"2021-03-29T23:20:00","date_gmt":"2021-03-30T03:20:00","guid":{"rendered":"http:\/\/newyorkwagyu.com\/?p=26"},"modified":"2021-04-17T14:18:18","modified_gmt":"2021-04-17T18:18:18","slug":"guinness-wagyu-chuck-roast","status":"publish","type":"post","link":"https:\/\/newyorkwagyu.com\/index.php\/guinness-wagyu-chuck-roast\/","title":{"rendered":"Guinness Wagyu Chuck Roast"},"content":{"rendered":"<p><strong><em>Serves 6<\/em><\/strong><\/p>\n<p><strong>Prep + Cook time: 3 hours<\/strong><\/p>\n<h3>Ingredients<\/h3>\n<hr>\n<p> 1 <strong>Wagyu Chuck Roast<\/strong> (3-4 lbs)<\/p>\n<hr>\n<p>16 ounces of <strong>Guinness Stout<\/strong><\/p>\n<hr>\n<p>2 Tablespoons <strong>Celery Salt<\/strong><\/p>\n<hr>\n<p>2 large <strong>Onions<\/strong> &#8211; <em>coarsely chopped<\/em><\/p>\n<hr>\n<p>3 large <strong>Carrots<\/strong> &#8211; <em>peeled and diced into chunks<\/em><\/p>\n<hr>\n<p>2 cups <strong>Beef Stock<\/strong><\/p>\n<hr>\n<p>2 Tablespoons <strong>Worcestershire Sauce<\/strong><\/p>\n<hr>\n<p>1 clove <strong>Garlic<\/strong> &#8211; <em>minced<\/em><\/p>\n<hr>\n<p><strong>Sea Salt<\/strong> and <strong>Fresh Cracked Pepper<\/strong> to taste<\/p>\n<hr>\n<h3>Directions<\/h3>\n<ol>\n<li>Preheat oven to 450 degrees. Pour Guinness into bowl and set aside. Rub roast with salt and pepper.<\/li>\n<li>In a deep cast iron skillet over medium-high heat sear roast on each side until browned. Turn off heat. Add chopped onions and garlic to pan. Add stock and Worcestershire sauce. Roast covered in preheated oven for 1 hour.<\/li>\n<li>Reduce heat to 350 degrees. Add the Guinness. The liquid should cover half of the roast.<\/li>\n<li>Roast covered for 2 more hours, checking liquid level occasionally and adding water if needed. Add carrot chunks during last 45 minutes.
